Helloooooooo SPRING! This is a very happy drink and I have to insist that you try it ASAP. It’s totally perfect for those getting warmer nights we’ve been experiencing. I love the juiciness of the watermelon & strawberry and the chamomile adds a really soothing, warm undertone – delish! Make a big batch of these for Sunday brunch…they’ll all be gone, trust me.

Lychee Mint Bellini

I’m having a lychee moment right now. While I eagerly anticipate the arrival of the fresh bundles available in Chinatown, I’ve been playing around with the canned ones at my local grocery store. They aren’t quite as good, but I sure do love the no peeling & pitting part!

If you’re a lychee-phobe and aren’t crazy about the texture, this bellini may be perfect for you becuase I just use the juice here with an optional lychee garnish. I love the bright, crisp flavor of the mint here, too…delish!

It doesn’t need to be Valentine’s Day for you to make yourself the prettiest cocktail! I’m still trying to use up all this prickly pear I bought the other day and figured that rose would be its perfect match. It totally is, and I love how you can make this a low-alcohol or strong drink by adding vodka or just opting for the bubbly. I suggest using a strong-bodied champagne or prosecco – prickly pear can be pretty earthy and the rose is perfumey, so you want something to balance these flavors.

Can you even handle how gorgeous this cocktail is? And yes, it tastes just as good as it looks! Super simple and special with pretty vanilla and plum juice topped with your favorite champagne. Oh and doesn’t that rimmer just take it to the next level?! (Don’t worry – more on that in a day or two…)

You can make these for a crowd by preparing the plum & vanilla mix ahead of time and storing in the fridge or in an ice bucket – just measure about 1 ounce per serving. Cheers!

Ohhh… I love this combo! A little bit tropical but still very smooth and subtle. If you can’t make your own passion fruit infused vodka, Skyy and Smirnoff both make versions available in the liquor store. If you make your own you should seriously consider straining the seeds before mixing up your cocktails – they may look pretty but are so not fun to chew on!
