
Everytime I make this dish, my boyfriend takes a big pile of leftovers to work for lunch. It’s one of those amazing meals where everyone gravitates towards you and you’re forced to answer questions about what it is and where you got the recipe in between bites. It’s totally worth it though, since it’s the most amazingly delicious bowl of comfort. I’ve made a few variations of it so far – one with ground turkey and another with chipotle peppers. It adapts well to any additions or replacements you may want to make and it’s also fine to halve the recipe. Serve with a dollop of sour cream and a drizzle of honey. If you wanna go the extra mile, toss some jalapeno seeds into the honey for an infused kick!

This is a great low-key dinner that leaves lots of yummy leftovers for the rest of the week. It’s so perfect to throw together on a Monday night because you don’t need a long list of fresh ingredients – let your well-stocked pantry do the work for you! The salty pancetta is what takes this dish to the next level, but if you can’t find it you can substitute diced bacon. This is definitely one of my latest go-to pasta dishes.

Can I just say how much I seriously love chicken & dumplings? These are definitely the best I’ve ever had – super creamy and rich with the most perfect biscuit-like dumplings that are nice and dense. You don’t get that slimy texture when you mix them up from scratch and they happen to be just as easy to make as the boxed versions!
This is an great comfort dish that my boyfriend loves for me to make him. Don’t be intimidated – it’s much easier than it looks! We’re basically just making a a fabulous chicken stock, a gravy with a roux base used to thicken it up & some super quick homemade dumplings. Take these three components and mix ‘em together for one amazing bowl of comfort.
The cook time here is a bit flexible. You need to let the chicken poach in the broth for at least 30 minutes so that it cooks through. If you have the time, let it simmer for up to an additional hour. This helps make the dish all the more flavorful and delish!

Corned beef & cabbage is one of those ultimate guy dishes. Super hearty and ridiculously easy to prepare… just stick it in a pot and let it go! It smells amazing while it’s on the stove and makes for a ton of leftovers (which is always good). I like to serve it with some simple mashed potatoes and mustard.
