
Grab some kumquats while you still can and make this sweet and sour mojito…it’s simply the best! Like a summer/winter mashup of flavor. I also love how these are so easy to prepare for a crowd. Just muddle a bunch of kumquats with mint, pour into a pitcher and stir in the other ingredients. When serving, add ice to the glass to chill the drink as you pour.

3 kumquats, halved
8 fresh mint leaves
2 ounces white rum
1 ounce lime juice
1 ounce simple syrup
1 ½ ounces club soda

In a cocktail shaker, muddle the kumquats with the mint. Add ice, rum, lime juice, and simple syrup. Shake well and gently stir in club soda. Pour into glass and serve!
