
I’m having a lychee moment right now. While I eagerly anticipate the arrival of the fresh bundles available in Chinatown, I’ve been playing around with the canned ones at my local grocery store. They aren’t quite as good, but I sure do love the no peeling & pitting part!
If you’re a lychee-phobe and aren’t crazy about the texture, this bellini may be perfect for you becuase I just use the juice here with an optional lychee garnish. I love the bright, crisp flavor of the mint here, too…delish!

5 canned lychees
5 sprigs fresh mint
prosecco or champagne to top
lychee and mint for garnish (optional)

The first step here is to make your lychee and mint juice. If you are using an electric juicer, add the lychees and mint to the chute. Extract the juice and pour into a cocktail glass. To juice by hand, add the lychees and mint to a glass and muddle until the fruit is well crushed. Strain the puree into a cocktail glass using a fine mesh strainer or julep strainer. Gently stir in the champagne and garnish with the remaining lychee and mint sprig. Enjoy!
