
Can you even handle how gorgeous this cocktail is? And yes, it tastes just as good as it looks! Super simple and special with pretty vanilla and plum juice topped with your favorite champagne. Oh and doesn’t that rimmer just take it to the next level?! (Don’t worry – more on that in a day or two…)
You can make these for a crowd by preparing the plum & vanilla mix ahead of time and storing in the fridge or in an ice bucket – just measure about 1 ounce per serving. Cheers!

¼ of a fresh plum
½ ounce vanilla simple syrup
champagne to top
sugar for rimmer (optional)
thin plum slice for garnish (optional – I popped mine in the freezer for 30 minutes to get it to float!)

Rim your cocktail glass with sugar if desired. Prepare your vanilla simple syrup and add to a cocktail shaker with the plum chunk. Crush the plum in the syrup using a muddler. Using a julep strainer or mini fine mesh strainer, strain the mixture into your cocktail glass. Top with champagne and the frozen plum slice. Enjoy!
